Extruded by gold dies in order to guarantee the integrity of the dough and produce a rough and porous, yet firm and aromatic pasta capable of embracing and holding any sauce with mastery.
The name 1.61, also referred to as the divine proportion represents beauty, harmony, and perfection, as well as illustrates the flawless relationship between the whole and its parts, between God and man.
Each package of pasta is thoughtfully wrapped in embroidered fabric, especially hand- selected by Designer, Angelo Inglese.
UNO.61 is made with only 100% of the best available Italian Durum Wheat selected by famed pasta maker, Raimondo Mendolia
UNO.61 is extruded with a distinctive and original gold-plated die that increases the porousness and confers unforgettable tooth to the bite, keeping the product at its best and ensuring that it does not break.
UNO.61 is dried through a slow process, fundamental for preserving the highest quantity and quality of the proteins and amino acids. Our pasta is dehydrated cyclically at between 36 and 38 degrees Celsius for 48 hours, with occasional pauses to reintegrate a bit of humidity into the product.
UNO.61, boasts excellent nutritional values. For every 100 gr, there are 360kcal, about 70% of which are complex carbohydrates; 13-14,5% protein; a negligible fat content; and a low glycemic index of only 40.
UNO.61 is an outstanding source of complex carbohydrates that provide slow-release energy, as well as a valuable source of glucose, the essential fuel for brain and muscles functions.

HOW THE IDEA WAS BORN
A few years ago, at the dawn of my 40s, I started having issues tolerating standard pastas. Unfortunately, it is one of my favorite foods.
There were many reasons why I could no longer enjoy it, some were digestive, and some were energetic. I felt myself dragging after eating this staple of my diet.
In an effort to confront this dilemma, I first eliminated eating pasta in restaurants. Then, after trying dozens of artisanal products with little success, my family and I also stopped eating it at home.
I dreamed of once again enjoying a meal of pasta together with my friends and my three girls, Lucia, Sara, e Maria.
Because of this, an idea was born: to create a pasta par excellence, while controlling the supply and production chain and guaranteeing the best possible digestibility, a low glycemic index, and above all, unbeatable quality.
Today, at 44 years old, I am happy to introduce those who made my dream a reality
Raimondo Mendolia designed and realized the
UNIQUE FORMAT of UNO.61 through the personal selection of only the best Italian Durum Wheat, hand-rolling the dough, extruding it in specially designed gold-plated dies, which guaranteed its excellent capacity for holding any sauce!
The enthusiasm with which my children first and then I, returned to eating pasta, convinced me that I had to make a few more batches for my whole family.
As of this writing, we are producing the thirteenth lot of pasta and each one disappears quickly thanks only to the word of mouth of friends and friends of friends.
That was, until the day that Angelo Inglese, the world-renowned Tailor of Ginosa, tried UNO.61.
Overcome by enthusiasm, he called to tell me that he “had to dress” each package of pasta, with his fabrics, sewn by hand, one at a time.
Now, everything was perfect!
This is how UNO.61 was born from a simple idea and then serendipitously brought together food, fashion, and design, in a product that delights the world with its beautiful, 100% Italian story.
Angelo Inglese’s hand-selected fabrics act as a gentle envelope for the pasta, which fully embraces the global need for recycling and sustainability. They are deliberately fanciful, each one different from the other: shirt remnants crafted completely by hand and closed with buttons of pure corozo.
In order to render them even more exclusive, each bag can be personalized with embroidery of your choice.
Distributed all over Europe for 15,90 Euro per 500gr package, UNO.61 can also be found in the most prestigious gourmet shops. A product that has found great success with the public that pushed sales to 30,000 packages in 2020.
